Meal Planning Monday #1

As a stay at home mum, my main weekly expense is the food shop. I'm willing to cut corners in some areas (mainly treats), but I am one of those mums who's insistent on their offspring eating lots of fruit, veg, nuts and the like. As a result of this, it's hard to keep the shopping budget as low as some I've seen.

We're a household of 5, but the littlest is only 8 weeks so he's obviously not counted and I try and keep everything below £40.

This week we will be eating:

  • Monday - Cottage Pie (batch cooked for an easy tea straight from the freezer)
  • Tuesday - Thai chicken curry & coconut rice
  • Wednesday - Chicken enchiladas & Mexican quinoa salad
  • Thursday - Wrap 'pizzas' - a make your own tea with salami, tomato, peppers, onions and cheese for the boys to top as they wish
  • Friday - Wagamama style noodle soup - Yasai Itame is my absolute favourite dish and we often have my take on it with lots of veg and tofu
  • Saturday - Tapas - a weekend favourite, we buy a crusty baguette, salami, olives, cheese and I'll throw together some patatas bravas
  • Sunday - Salmon tagliatelle - my boys love smoked salmon and it's so easy to put together, perfect for the back to school/work ironing/tidying/homework rush on a Sunday evening.

  2. I would love for my shopping to come to £40. I can't seem to get it below £60 most of the time.

    Our favourites are lasagne and cottage pie... :)
